Marinated Shrimp with Jalapeño Vegetable Sauté
The Litehouse Sesame Ginger Dressing is used as both a marinade and a sauce.
Ingredients
2 dozen fresh large shrimp, peeled & deveined
1/2 jalapeño, seeded and minced
1 ½ cup napa cabbage, shredded
1 cup fresh snow peas, sliced
¾ cup carrots, shredded
½ cup scallions, sliced
1 cup Litehouse® Sesame Ginger dressing or Litehouse® Organic Ginger w/Honey dressing
Salt & pepper to taste
Directions
Pour ¼ cup of Litehouse® dressing in bowl with shrimp and allow to marinate for 1 hour.
Heat grill or sauté pan over high heat.
Add 1 Tbsp. of olive oil to pan and cook shrimp for 2-3 minutes per side and reserve.
Add jalapeño, carrots, cabbage and scallion to hot pan.
Season lightly with salt and pepper, toss well for 2 minutes and turn off heat.
Place warm vegetables in a bowl with the sliced peas.
Combine with ¼ cup of Litehouse® dressing.
Place vegetable sauté on plate and top with cooked shrimp.
Serve additional dressing on side.
