The blend of flavors will remind you of your favorite Asian restaurant dish.
4 skinless, boneless chicken breast halves
2 Tbsp sesame oil
1 medium onion, sliced thinly
1/2 Tbsp Litehouse Instantly Fresh Garlic
1 Tbsp red chili flakes
3 Tbsp Litehouse Instantly Fresh Lemon Grass
2 Tbsp soy sauce
1 tsp sugar
1 tsp curry powder
1/2 cup coconut milk
2 Tbsp chopped peanuts
3 Tbsp Litehouse Instantly Fresh Cilantro
In a large skillet, heat oil over medium heat and saute onion and garlic for 1 minute. Add chicken, chili flakes, lemon grass, soy sauce, sugar and curry powder. Cook for 10 - 15 minutes or until chicken is no longer pink in the middle.
Add coconut milk and simmer for 5 minutes, stirring frequently. Sauce should thicken.
Serve over rice or Asian noodles. Garnish with peanuts and cilantro.
