Kale and Sausage Pasta

Serves 6-8 | Finish in 30 minutes

This delicious and healthy pasta dish is the perfect convenience meal for a busy weeknight dinner. Full of healthy kale and hearty white beans this is great for a cold winter night.


1 lb. spicy Italian turkey sausage
4 cups chopped kale
2 shallots minced
1 can white beans drained and rinsed
1 tsp. Litehouse Instantly Fresh Garlic
1/2 tsp. pepper
4 cups chicken stock
12 oz. whole wheat spaghetti
1/4 cup grated Parmesan cheese
1/4 cup fresh chopped parsley


Bring a large pot of water to a boil. Add spaghetti and cook according to package direction. Meanwhile heat a large skillet over medium high heat. Add the turkey sausage and cook until no longer pink. Add the kale, white beans, shallots, garlic, and pepper. Saute until kale begins to wilt, about 3 minutes. Add the chicken stock and bring to a simmer. Simmer for 20 minutes or until 2/3 of the liquid has evaporated. Strain the pasta from the water and add to the sausage and kale mixture. Toss until the pasta is coated in sausage mixture then add the parmesan and parsley. Season with salt to taste then serve.
