Grilled Cilantro Vegetables

Heavy duty foil
1/2 cup melted butter unsalted
2 tsp Litehouse® Instantly Fresh Cilantro 
4 ears of corn (1/2 an ear per serving)
Cherry tomatoes sliced in half
2 small zucchini or summer squash sliced
2 chopped garlic cloves
salt and pepper to taste


Mix the butter, garlic cloves, and Litehouse® Instantly Fresh Cilantro in a small bowl.
Arrange the corn, tomatoes, and zucchini on the center of the foil. Drizzle the butter mixture over the sliced vegetables. Mix the vegetables so that the butter mixture is well distributed. Seal the vegetables in the foil packet. Cook the vegetables on the grill for about 20 minutes on a hot grill. Very carefully, open the foil packet. Be careful of the steam as it escapes from the packet. It will be very hot. Slice the corn off the cob carefully and mix with the other vegetables. Or you can enjoy the corn on the cob instead. Season with salt and pepper and serve.
