Garlic Blue Cheese Potato Salad

Serves 8 | Finish in 2.5 hrs


3 pounds unpeeled new potatoes -- quartered
8 oz. Litehouse® Garlic Blue Cheese 
¾ cup Litehouse® Bleu Cheese Crumbles 
½ lb. bacon, diced, cooked until crisp, crumbled
1 Tbsp. parsley 
1 tsp ground black pepper
½ small red onion, chopped


Place potatoes in a large saucepan and cover with salted water.
Bring to a boil and cook until potatoes are tender; drain and rinse
with cold water to stop cooking process.
In a large bowl, combine remaining ingredients; stir in potatoes.
Cover and refrigerate 2 hours for flavors to blend.
Serve chilled.
