Dilled Red Potatoes and Green Beans

This makes a simple, low-fat side dish, and is a refreshing take on traditional potato salad.

Ingredients

1 pound baby red potatoes
1/2 pound fresh green beans, sliced 2" diagonal
1/4 cup plain non-fat yogurt
1 cup fat free sour cream
2-3 Tbsp. Litehouse® Instantly Fresh Dill 

Directions

Bring water to boil. Place potatoes in a steamer, and steam until just tender, approximately 15 minutes depending on size. Add green beans. Continue steaming 5-7 minutes longer. (Steaming helps to keep the color and the skins on the potatoes from splitting). Remove from heat and drain. When cool, cut the potatoes into halves or fourths. In small bowl, mix yogurt, sour cream and dill. Gently mix with the potatoes and green beans. Add salt and pepper to taste. Garnish with additional dill sprinkled on top.
