7 cups chopped potatoes ¾ cups Opadipity Cucumber Dill 1 teaspoon Litehouse Instantly Fresh Parsley 2 tablespoons Dijon mustard 1/2 teaspoon salt 1/4 teaspoon pepper
Bring a large pot of salted water to a boil. Add potatoes and cook for about 15 minutes. Drain, cool, and chill. Meanwhile, in a medium bowl combine Cucumber Dill, parsley, Dijon, salt and pepper. Pour mixture over potatoes and toss gently. Serve cool.
