Creamy Spinach Artichoke Pasta

Serves 6 | Finish in 15 minutes

12 oz. bow tie pasta
1/2 onion finely chopped
4 oz. low fat cream cheese
1/2 cup OPA Greek Yogurt Kalamata Feta Dressing
1 cup lowfat milk
1 Tbsp. Dijon or whole grain mustard
12 oz. frozen spinach thawed and excess water squeezed out
1 can quartered artichoke hearts drained
1/2 tsp. pepper, crushed red pepper flakes (optional)


Bring a large pot of salted water to a boil. Add the pasta and cook 7-8 minutes and drain. Meanwhile heat a drizzle of olive oil in a pan over medium heat. Add the onion and cook until soft, about 3 minutes. Add the cream cheese, dressing, milk, and Dijon. Cook stirring constantly until the cream cheese is melted. Add the spinach, artichoke hearts, and pepper. Season with salt to taste and simmer over low heat until pasta is ready. Toss with the cooked pasta and top with crushed red pepper flakes if desired.
