Leftover chicken is turned into an amazing mayonnaise-free chicken salad for one.
1 c. shredded chicken meat,
3 Tbsp. Litehouse Poppyseed Dressing,
2 Tbsp. Greek yogurt or plain yogurt if Greek isn’t available,
2 Tbsp. dried cranberries,
1 Tbsp. sliced or slivered almonds,
1-2 Tbsp. Litehouse Artisan Blue Cheese Crumbles,
¼ tsp. Litehouse Instantly Fresh Dill,
Pinch of both salt and pepper,
1. Dump all ingredients in a bowl. Use the bowl you’ll be eating from. No need to dirty an extra dish.
2. Use your fork to stir until just combined.
3. Be naughty and add an extra sprinkle of blue cheese. That stuff is too good not to.
4. Chow down!
