A Chinese Chicken Salad is an art that we are all constantly trying to perfect! Try this with a lite lunch or as a dinner side.
10 oz. frozen, breaded chicken tenders (or 2 chicken breasts, cooked & sliced)
4 cups green cabbage, shredded
1 cup red cabbage, shredded
4 carrots, shredded (about 1 cup)
1 bunch romaine lettuce, shredded
2 oz. sliced almonds, toasted
1/4 cup sliced green onions
1 cup chow mein noodles (garnish)
3/4 bottle Litehouse® Sesame Ginger
4 Large tortillas to make into a wrap (optional)
Cook chicken tenders as package directs. Combine cabbage, carrots and romaine. Toss with Litehouse® dressing. For individual servings: Divide salad mixture among 4 large bowls. Top with chicken, green onions, almonds and chow mein noodles. Serve immediately with extra Litehouse® dressing, if desired.
Divide Salad mixture into 4 large tortillas fill with chicken, green onions, almonds, and chow mein noodles roll into tight wrap. Serve immediately with optional extra Litehouse® Sesame Ginger dressing or OPA by Litehouse® Blue Cheese dressing for dipping.
Note: To toast almonds:
Heat oven to 350 F. Place almonds in single layer in shallow baking pan. Bake 7-8 minutes, stirring occasionally until light brown. Cool completely.
