Caesar Salad with Roasted Chickpeas

Serves 1 | Finish in 25 minutes

Love Caesar salads again without adding all the calories! Add a little crunch by topping with roasted chickpeas and guilt-free drizzle of our Litehouse Purely Balanced Garlic Caesar. Only 45 calories per serving!


1 1/2 cup Romaine Lettuce, chopped

Roasted Chickpeas

1/2 cup Chickpeas, cooked and drained

Olive Oil

Salt & Pepper to taste

1/2 Avocado, sliced

1/4 cup Parmesan

1/4 Lemon, cut lengthwise

Purely Balanced Garlic Caesar to taste


To prepare roasted chickpeas, toss chickpeas in olive oil, and add salt & pepper to taste. Preheat oven to 425 degrees Fahrenheit. Add chickpeas to a parchment paper lined baking sheet. Bake for 20 to 30 minutes, turning the chickpeas halfway through.

Layer lettuce, chickpeas, avocado and parmesan on a dinner plate.

Drizzle with Purely Balanced Garlic Caesar to taste.

Serve with a lemon wedge.
