Brazilian Kalamata Feta Muffins

Serves 12 | Finish in 25 minutes

Delicious Brazilian pastries made with OPA Kalamata Feta and Litehouse Instantly Fresh Basil.


1/3 cup vegetable oil 1 egg 2/3 cup milk 1-1/2 cups flour 1/4 cup grated Parmesan cheese 1 tsp. of salt ½ cup OPA Kalamata Feta Dressing 2-3 Tbsp. fresh basil, chopped


Preheat oven to 400°F. Grease a mini-muffin tin and set aside (or use paper or aluminum muffin cups) Blend all the ingredients in the blender until smooth. Use a spatula, if needed, to scrape down the sides of the blender so that everything gets blended well. Pour mixture into the greased tin and wipe clean any excess or drips. Bake in the oven for 13-15 minutes or until the whole batch is puffy and just lightly golden. Remove cheese rolls from oven and let cool on rack for a few minutes before serving. Serve cheese rolls warm by themselves, or with butter.
