Bleu Cheese London Broil

Serves 4 | Finish in 40 minutes

10 oz. bag frozen chopped spinach, thawed
 ¼ cup pine nuts
2 Tbsp. minced garlic
1 ½ lbs. thin-sliced London broil (4 thin steaks)
2 Tbsp. olive oil
4 oz. Litehouse® Idaho Bleu Cheese Crumbles


Preheat oven to 400°. Place the thawed spinach in a colander in the the sink. Press with paper towels until moisture is removed. Place spinach in food processor. Add the pine nuts, Litehouse® Idaho Bleu Cheese and garlic. Pulse until a thick paste is formed, about 10 seconds. Spread ¼ of the cheese and spinach mixture evenly over each steak. One at a time, roll the steaks into a cylinder. Use kitchen twine to tie each end of the rolls. Heat oil in large skillet. Add the steak rolls and sear on each side approximately 1 ½ minutes. Transfer the rolls to a rimmed baking sheet and place in the oven 15-20 minutes.
