Baked Feta and Fig Compote

This pleasantly delicious Feta and Fig appetizer will leave you too full to even think about eating dinner!


1 cup dried figs, sliced into quarters 1 cup water 2 ½ Tbsp.s honey 2 Tbsp. Litehouse Instantly Fresh Thyme 8-ounces Litehouse Feta Cheese 1 tsp. olive oil Toast rounds or crackers to serve with and spread on


Preheat the oven to 400°F. In a small pan over medium-high heat, combine the figs, water, honey and thyme, bring to a boil. Lower heat and simmer, stirring occasionally, for 15 minutes. Using spoon, move figs to a bowl. Boil the remaining syrup for 2-3 minutes. Throw out remaining thyme and pour syrup onto figs. Rub olive oil over all surfaces of the feta and place the cheese in a small oven-proof dish. Bake for 8 minutes, until warm and quite soft to the touch, but not melted. Spoon compote over feta, sprinkle with additional thyme and serve immediately with toast or crackers.
