Avocado and Litehouse Ranch Yogurt Guacamole by Chef Jill Davie. A delicious twist on an already delicious food!
2 ripe avocados
1 tomato, cored, seeded, and diced
1 jalapeno, seeded and minced
3 Tbsp. red onion, minced
1 clove garlic, minced
Salt to taste
1/2 cup Litehouse® OPA Ranch
2 Tbsp. + ¼ tsp. Litehouse® Instantly Fresh Cilantro
Cut the avocados in half and remove the pits. Using a spoon, scoop out the avocados from their skins into a medium-sized bowl. Use the back side of a fork to smash the avocados. Add the Litehouse® OPA Ranch Yogurt and continue to blend together with the fork. Mix in the tomato, jalapeno, red onion, 2 Tbsp. Instantly Fresh Cilantro, and the garlic. Season to taste with salt. Place in a serving dish, garnish with the remaining Litehouse® Instantly Fresh Cilantro and serve with your choice of chips, crackers, or vegetables.
