With all the holiday hustle and bustle I've been looking for no fuss meals this month. I'm really getting into these one pot dinners! Everything cooks in one pot so clean up is a breeze. Who needs a pile of dishes to wash when there's a pile of presents to wrap! With only a handful of ingredients you can create a dinner the whole family will love. Lemon Herb Dressing and Marinade creates a nice zing to the chicken and the herb infused broth soaks right into the rice while it's cooking.
When preparing this recipe, choose a skillet with a tight fitting lid. You'll want to make sure the chicken and rice is left undisturbed. No need to flip or fuss.
To ensure you get a nice color on your chicken go ahead and brown it for a few minutes after it marinates. Then you simply set it aside for a few minutes while stirring the rest of the ingredients in the same skillet. Nestle the chicken back into the rice and throw a lid on it. That's it! I choose boneless chicken thighs because they are so forgiving if you accidently forget to set the timer and over cook them.
