Tortellini Summer Salad

Boy is it hot this summer! There is nothing worse than having to crank up the oven and stand over the stove on a hot summer evening. That's why I'm focusing on cooking dinners using as little heat as possible. This means absolutely no oven time and just a few minutes at the stove. This has kept my house cool and my pants fit a little better because I'm eating a lot of fresh produce!

Tonight's dinner is a cool and fresh Tortellini Summer Salad. A basic salad full of fresh summer garden vegetables turns into a full meal with the addition of tortellini pasta. I love buying fresh tortellini from the store during the steamy summer months. They are filled with either cheese or meat and because they are fresh, the pasta takes only 3 minutes to cook. I've eaten these wonderful pastas hot and enjoy them cold right out of the leftover container the next day. So versatile, so easy, and so delicious! Tortellini When choosing your vegetables for this summer salad don't feel that you have to stick with the ingredient list below. Go hog wild! Make it colorful, support your local Farmer's Market, raid your neighbors' vegetable garden in the middle of the night... You really can't go wrong with it, in my opinion all vegetables work well together when prepared in a fresh dish such as this one!

 Amping up the flavors of this salad was simple with Litehouse. The tangy Feta Cheese Crumbles from their Simply Artisan Reserve line add a salty creamy touch to every bite and because this Feta has such incredible flavor you don't have to use a lot to get a flavor impact. I chose Litehouse's Greek Vinaigrette to dress this salad because it meshes perfectly with the Feta and because it's one of my favorites! I just poured the whole bottle in and gave it a quick toss. Boom! Perfect salad! How easy is that?

Tortellini Summer Salad

Serves 8 | Finish in 19 minutes

Don't even think about turning on that oven tonight! Keep the kitchen cool with my Tortellini Summer Salad. Quick cooking tortellini pasta turns a bowl full of summer vegetables into a full meal. Cool, crisp, fresh, and filling, this is the perfect dinner to give your oven a break!


1lb. fresh tortellini any flavored filling
1 cucumber chopped
1 red bell pepper chopped
1 yellow bell pepper chopped
1 red onion chopped
1 pint grape tomatoes halved
1 handful fresh herbs such as parsley or dill
1/2 head purple cabbage shredded
1/2 cup Simply Artisan Reserve Feta Cheese Crumbles
1 bottle Litehouse Greek Vinaigrette


Bring a pot of water to a boil. Boil the fresh tortellini according to package directions and drain. Meanwhile toss the remaining ingredients in a large bowl. Gently toss in the tortellini and serve.
