Sweet Potato Nachos

I love Sundays. It’s the one day a week that demands nothing from us. There is no early morning alarm, no homework, no running the kids to practices, no working at all! After a visit to church we are free to do what we want when we want. Usually we choose to drop the diets and park it in front of the TV to watch some Football!

Choosing not to feel a drop of guilt while chowing down on our favorite football food does not mean we want to feel sickly and bloated for two days afterwards. We eat rather clean throughout the week so I try to make amazing snack foods that still provide the nutrition our bodies are used to getting. This usually means I cut out the empty salty carbohydrates and use delicious vegetables instead! This time I’m swapping out salty tortilla chips with flavorful sweet potato wedges. What a winning trade!

My BBQ Bacon Ranch Sweet Potato Nachos are topped with all of my favorite indulgent nacho toppings and provide a carbohydrate option that my body is used to breaking down. Crispy yet tender sweet potato wedges are smothered in sharp cheddar cheese and crispy bacon. Once melted and bubbly a healthy dose of Texas style BBQ sauce and Litehouse’s Organic Ranch Dressing take this dish over the top. It’s sweet, savory, cheesy, smoky, and creamy all at the same time! Does it get any better?

Since these sweet potato nachos come together in 30 minutes I’ll have time to prepare a few more snacks before serving dinner at the coffee table. That’s just how we roll on Sundays and I don’t feel badly about it at all! It’s our Sunday and we’ll do what we want to, as long as it’s football season.

BBQ Bacon Ranch Sweet Potato Wedges 96

Sweet Potato Nachos Recipe

Serves 6 | Finish in 30 minutes


3-4 sweet potatoes cut into wedges
Olive oil
Salt and pepper
4 oz. grated extra sharp cheddar cheese
4 slices bacon cooked then crumbled
4 scallions sliced
BBQ sauce
Litehouse Organic Ranch dressing or Litehouse Lite Blue Cheese Dressing


Preheat the oven to 400 degrees.
Toss the potato wedges in a drizzle of olive oil and salt and pepper.
Lay in a single layer on a baking sheet and bake in the oven for 20 minutes.
Sprinkle the cooked potatoes with the cheese and bacon.
Return to the oven and cook until cheese is melted.
Sprinkle with the scallions and drizzle with BBQ sauce and the Ranch Dressing.
Serve immediately.
