Imagine the sound of waves crashing up on the shore and the smell of suntan lotion filling the air. There’s nothing better than a beach vacation where you’re enjoying the idea of having nothing else to do but relax and have people bring you cocktails and fresh salads. Now if you come back to reality you can still enjoy a moment for yourself with this fresh, Summertime Shrimp Salad before we move into the fall and winter months.

There’s no better time than the end of summer to snap up all of the fresh vegetables that you can before they’re gone. The base of your salad can include a mixture of lettuces, shredded carrots and cabbage for the ultimate crunch. Topping it off with ripe avocado, tomatoes, colorful peppers and cucumbers will give your salad a summertime feel that everyone will enjoy.

When you’re serving a salad as an entrée it’s important to add protein. Hardboiled eggs are a great addition to this salad and shrimp is an easy topping that you can flavor and cook in a lot of different ways. Marinating the shrimp for this salad in olive oil, lemon juice, salt, pepper and a sprinkle of Freeze Dried Salad Herb Blend will give a light flavor to the salad.

The best topping to keep this salad light and beachy is Creamy Ranch Yogurt dressing. This dressing will keep your salad low in calories but high in protein and flavor. Give this salad a try for lunch or dinner this week and imagine yourself relaxing on the beach in the salty sea air.

Summertime Shrimp Salad Recipe

Warm shrimp and hard-boiled eggs top this delicious and healthy summertime salad, perfect for lunch or dinner. Enjoy it with Litehouse® Creamy Ranch Yogurt dressing or any of your favorite Litehouse® dressing flavors.

Ingredients
  • 6 ozUncooked Shrimp, shelled
  • 3 tbspolive oil
  • 1 tspLitehouse® Freeze Dried Salad Herb Blend
  • 1 clovesGarlic, smashed
  • 1 eaLemon
  • 1 eaSalt and Pepper
  • 4 cupMixed Greens (spring mix, romaine, etc.)
  • 1 cupGrape Tomatoes, halved
  • ½ cupOrange Bell Pepper, sliced thin
  • ½ cupCucumber, sliced
  • 1 eaAvocado, sliced thin
  • 2 eaHardboiled Eggs, sliced
  • ½ cupRed Cabbage, shredded
  • 1 eaLitehouse® Creamy Ranch Yogurt dressing

Directions

Combine shrimp, olive oil, garlic clove, herb blend, juice from ½ of the lemon and salt and pepper in a bowl. Toss to combine and allow to marinate for 10-15 minutes. Turn the oven to high broil. Lay out shrimp in a single layer on a baking sheet and broil for 2-3 minutes, until shrimp is pink.Divide mixed greens, peppers, tomatoes, cucumber, avocado, eggs and cabbage between 2 bowls. Divide shrimp and place them on each of the two salad bowls. Serve with remaining lemon, sliced into wedges, and Litehouse® Purely Balanced™ Garden Ranch Greek Yogurt Dressing.
