Valentine’s Day is here! I love this fun holiday and everything that comes with it, especially the color pink! Every year I come with a bunch of fun Valentine’s Day themed foods to get the kids excited with me. This year in particular has been filled with a lot of sweet treats, like too many. A healthier option was needed, badly.
In years past I’ve always had four little boxes of chocolate waiting for the kids on Valentine’s Day morning. They always eat the chocolates before breakfast is served and then feel too icky to eat any real food. This year I decided to create a fun breakfast that will look as exciting as a box of chocolates but won’t leave everyone with a sugar buzz. A perfectly pink Strawberry Cheesecake Smoothie topped with barely sweetened whipped cream will not only fill their bellies with healthy fruits and yogurt, it will also fit in perfectly with the Valentine’s Day theme.
Smoothies are already an incredibly quick breakfast option but I decided to use Opadipity by Litehouse Sweet Greek Yogurt Dip to help get breakfast served before the kids even notice there are no boxes of chocolate! The Creamy Cheesecake flavor blended in perfectly with the other smoothie ingredients creating a fun and exciting flavor combination, plus I got to tell the kiddos that they were having cheesecake in their breakfast! Thankfully this dip is low in sugar unlike real cheesecake. I get the flavor without all of the other nonsense!
Since the smoothie is so healthy and not loaded with sugar I felt perfectly ok with adding a dollop of lightly sweetened fresh whipped cream, it really gives the smoothie a “special day” feel. You can certainly take it further by adding some colorful sprinkles or shaved chocolate, but I felt that a fun straw would do the trick. These pretty little smoothies will be sucked right down and you can feel good about starting off Valentine’s Day in a healthy way!
