Spring Ranch Chicken Salad Croissants

Every day, moms around the globe make a difference in the lives of their children with all of the big and little things that they do. While I don’t personally need a special day to remind myself to show appreciation for my mother, it’s sometimes nice to just carve out an entire day for her to really make her feel loved.

I grew up with a stay-at-home mom and in my ‘older’ years I have learned to appreciate how important that aspect was to my upbringing. I look back on all of the fancy cakes my mom used to make for my birthday so that I could bring them to my grade school class and all of the field trips she was able to attend and really think about how much she sacrificed to make sure that I felt loved and cared for. It is times like those that make me want to return all of the love to her now that I’m an adult. I like to put a lot of thought into my Mother’s Day plans each year. Plans typically include some sort of special lunch or brunch, a fancy gift that my mom wouldn’t typically buy for herself and just the overall aspect of giving her my time. But this year I thought I would do something a little different. Since I’m big on party planning I thought it might be nice to host a little brunch at home this year with my brothers to celebrate. I always joke that my mom doesn’t get out much and sometimes I think she’s a little envious of all of the fancy foods that I get to eat as a food blogger, so this year for brunch I’m going to bring the ‘fancy’ to her. I’m thinking a variety of hor’devours, sandwiches, fancy drinks and bite-size desserts would be perfect. These Spring Ranch Chicken Salad Croissants seemed to be the perfect Mother’s Day brunch main-course. I thought perhaps I would make them with spring flavors such as English peas and almonds and dress the salad with Litehouse Organic Ranch. The ranch adds an extra burst of flavor and is completely organic.

 Like I said, I don’t need a special day to show my mom how much she means to me but she has devoted the last 30 years of her life to raising me. It never hurts to show your mom a little extra appreciation!

Spring Ranch Chicken Salad Croissants

Serves 4 | Finish in 10 minutes

This recipe turns a classic sandwich recipe into a spring-infused delight, featuring English peas, almonds and organic ranch dressing.

Ingredients

½ cup sliced almonds toasted
½ cup Litehouse Homestyle Ranch dressing
¼ cup low-fat sour cream
½ cup fresh English peas
1 medium shallot finely chopped
2 ribs celery
2 cups cooked chicken diced
4 large croissants
Lettuce to serve

Directions

Combine all ingredients (sans croissants and lettuce) in a bowl and gently mix to combine. Slice each of the croissants in half and lay lettuce on the bottom portion. Divide the chicken salad evenly between the croissants and serve.
