Snappy Blackened Shrimp Salad

Nothing beats an easy entrée salad for dinner on busy nights, especially when it’s one exploding with bold, almost beyond extreme, flavor! My 10-minute recipe for Snappy Blackened Shrimp Salad with Blue Cheese will take your taste buds on a welcomed wild ride, bite after bite. Just imagine succulent shrimp perfectly spiced up to be cooled down by the crunch of veggies doused in creamy, comforting blue cheese dressing. It’s like riding a roller coaster with you hands in the air – exhilarating!

Chunky Blue Cheese dressing from Litehouse Foods has long been a family favorite to use with peppered up burgers, Buffalo wings and other hot things – so it made sense to pair this so-thick-it-could-be-dip dressing with blackened shrimp. Preparing the shrimp is ridiculously low stress, especially relying on pre-cooked, tail-on shrimp from the freezer department of the market. After a quick thaw in water, toss shrimp with olive oil and Jamaican jerk seasoning and sauté for just a few minutes until the spices bloom.

After setting shrimp aside to cool for a few minutes, the salad is easy to plate or layer in individual jars or glass bowls. Washing and spinning dry lettuce is a chore you can forever eliminate from life thanks to the wide variety of washed and ready to eat salad blends from Fresh Express. I’m a huge fan of the Spring Mix with it’s tender, pretty assortment of baby lettuce leaves but the Italian blend with crisp Romaine lettuce and purple cabbage would suit those who crave extra crunch.  Bright little Cherubs tomatoes from NatureSweet Tomatoes add a heavenly touch to this and any salad, bursting with bite-sized sweetness – and it’s hard to resist snacking on a few every time you open the fridge.

Snappy Blackened Shrimp Salad with Blue Cheese Dressing

Serves 4 | Finish in 10 minutes

Take your taste buds on a welcomed wild ride with this snappy, spicy shrimp salad tempered with cool crunch vegetables and bold blue cheese dressing. Only 10 minutes from prep to plate!


1 lb. tail-on pre-cooked frozen shrimp (approximate 40 count/lb.), thawed
2 tablespoons olive oil
2 tablespoons jerk seasoning
8 ounces Litehouse Foods Chunky Blue Cheese Dressing
1 15-ounce can chickpeas, drained and rinsed
1 10.5-ounce carton NatureSweet Cherubs Tomatoes
1 5-ounce bag Fresh Express Spring Mix
1 cup snap peas
1 4-ounce container Simply Artisan Reserve Blue Cheese Crumbles


Drain and liquid off thawed shrimp and pat dry with paper towels.

Add thawed shrimp to medium bowl with olive oil and jerk seasoning, stir until thoroughly coated.

Head large skillet to medium-high heat; add shrimp and sauté for approximately 3 minutes until jerk spices becoming fragrant and lightly browning. Take care not to over heat as shrimp are already pre-cooked.

Remove shrimp from skillet and let cool to room temperature.

Meanwhile, “build” salads in four bowls or jar by layering in this order for each jar – 2 tablespoons dressing, approximately ½ cup chickpeas, 10 cooled shrimp (more or less depending on exact count), halved cherubs tomatoes, spring lettuce mix, snap peas and 1 ounce of blue cheese crumbles.

Serve immediately, or as long as dressing stays on bottom of bowl or jar (away from lettuce) can be made ahead and kept in the refrigerator overnight.
