Slow Cooker Brisket

My favorite things about fall are the leaves turning beautiful colors, the chilly air that requires sweaters and boots, everything pumpkin-flavored and cooking meals in the slow cooker.

Slow cooker meals bring back great memories from childhood when my mom would cook beef stew on a snowy day. Many comfort foods like soups, stews and meatloaf are easily cooked in a slow cooker and maybe that’s why I use this great cooking gadget much more during the colder months. Utilizing the slow cooker in the hot months is a great idea as well, which eliminates the need to turn on the hot oven or stovetop.

Comfort meals aren’t the only things that can be cooked in a slow cooker. Did you know you could make chocolate cake, cinnamon rolls, and even bread in a slow cooker? I have yet to try to make dessert in my slow cooker, but one of my favorite meals to make is brisket. Brisket is the type of meat that needs to be cooked slowly to tenderize. By using a slow cooker, you can put it in the morning and not worry about it until dinnertime.

This slow cooker brisket only uses five ingredients: brisket, Litehouse Instantly Fresh thyme, mushrooms, beef broth and Litehouse Lite Honey Dijon dressing. (There is also salt, pepper and oil, but we don’t need to count those)! The thyme and honey Dijon mustard pair perfectly together with the beef and when you serve it over mashed potatoes or egg noodles; it is the ultimate comfort meal.

Slow Cooker Brisket

Serves 5-7 | Finish in 8 hours, 10 minutes

Prep time is only 10 minutes for this beef brisket cooked in the slow cooker. Slow cooker meals are perfect for busy fall and winter days.


2.5-3 lb. beef brisket,
1 Tbls. Litehouse Instantly Fresh Thyme,
8 oz. sliced mushrooms (any kind),
2 cups beef broth,
1 cup Litehouse Lite Honey Dijon, Dressing,
salt and pepper,


1. Rub brisket with 1 Tablespoon Thyme and salt and pepper to taste.

2. Preheat a sauté pan over medium-high heat with a drizzle of oil.

3. Sear the beef brisket for 2 ½ minutes on each side.

4. Place in slow cooker. Surround the beef with the mushrooms.

5. Pour the beef broth and Lite Honey Dijon Dressing over the beef and mushrooms.

6. Cook on low for about 8 hours.

7. Serve with mashed potatoes or egg noodles.
