Quick and Easy Dilly Dip Baked Chicken with Greek Salsa Recipe

As a busy mom, I am always on the lookout for quick and easy recipes that are still healthy and kid-friendly. I find I often turn to baked chicken recipes because my son loves restaurant-style chicken strips, but baked chicken is a much healthier alternative.

There is not enough time in the day to make several different recipes for dinner. This Baked Chicken made with Litehouse Dilly Dip is topped with Greek Salsa. You can omit the salsa for your picky eaters without making a whole different meal because simple baked chicken is usually an easy kid-friendly dish. Add some veggies and fruit kabobs to the side and it’s a delicious and healthy meal! My son is still young; his taste buds will change as he grows older. I encourage him to try everything on his plate so he is exposed to different foods, flavors and nutrition. It is amazing how kids automatically think they won’t like certain foods, but then they try it for the first time and it’s not so bad! I also encourage moms with picky eaters to get their children involved in the kitchen. My son is amazed that in our garden, the vegetables start as tiny seeds and grow into actual food that we can eat! By watching the growing process and then helping make the dinner, kids are much more likely to try new foods.

Easy Dilly Dip Baked Chicken with Greek Salsa

Serves 4 | Finish in 45 minutes

Top chicken with these three ingredients and you’ve got yourself a quick and delicious baked family dinner. The Greek salsa adds tremendous flavor in little time!


4 boneless skinless chicken breasts,
½ cup Litehouse Dilly Dip,
½ cup grated Parmesan cheese,
1 cup whole-wheat Italian breadcrumbs,

For the Greek Salsa:,
1 cup diced cucumber,
½ cup diced red bell pepper,
½ cup chopped kalamata olives,
½ cup Litehouse Feta Cheese Crumbles,
½ tsp. Litehouse Instantly Fresh Dill,
2 Tbls. Extra virgin olive oil,
salt and pepper to taste


1. Preheat oven to 350°. Meanwhile, mix Dilly Dip and Parmesan cheese in a bowl.
2. Place the chicken breasts in a greased, 9x13 baking pan.
3. Fully cover the chicken with the dilly dip and cheese mixture and sprinkle the breadcrumbs on top.
4. Bake at 350 for 25 minutes.
5. Meanwhile, prepare the Greek Salsa. Place all of the diced ingredients in a small airtight container. Add the feta cheese, dill, extra virgin olive oil and salt and pepper. Let the salsa marinate in the fridge while the chicken is cooking.
6. Top the freshly baked chicken with the salsa and serve!
