One Pan Creamy Ranch Chicken and Rice Recipe

I like to think of myself as being an organized person but honestly, I’m not. Well, I take that back. I organized in some areas of my life, but sometimes other areas are a mess! I’ve always been someone that likes to have a lot of things going on every day and being involved in a lot of different things and when you mix owning my own business into the mix it gets messier. I’m organized enough to run my own business, but then other things start to get chaotic. I know that I’m starting out this post in a very negative sort of way, but I wanted to introduce why this One Pan Creamy Ranch Chicken and Rice is my organizational savior.

In the past few weeks I have been really cleaning up my act and trying to stay more focused on things that need to be accomplished. I tend to procrastinate when it comes to things that I don’t want to do which just leads to more chaos. I decided that weeknights will be reserved for easy meals and I’ll save the fun, elaborate cooking for the weekend. It really frees up a lot of my time during the week to accomplish my goals, get in good workouts and have a few minutes to relax here and there. Here are some other tips that I recommend if you’re trying to keep your life organized:

  • Each day write down your 3 most important tasks that you’d like to accomplish. This will help you focus on those and feel less failure when you don’t accomplish anything.
  • Make use of the word NO. I tend to say yes to everything which results in me overscheduling my time and then nothing gets accomplished. I can’t do everything!
  • Declutter your life and your home – I tend to collect piles of things that I plan to ‘get to later’ and then never do. I did a lot of decluttering over the past few weeks to feel more ‘Zen’ in my home and it has resulted in me feeling more comfortable with sitting down to accomplish things.
  • I have learned to delegate. Often, I like to do things for myself and whenever my husband asks if he can help I tell him no. I’ve changed that tune. I have learned to allow him to help me and it really has enabled me to free up more of my own time to accomplish other projects.

Back to dinner! I have learned to plan my meals better and spend my weekends doing as much preparation as possible so that I’m not wasting time during the week. This meal is super quick and easy to put together and I love that it only uses one pan to prepare! The creamy Homestyle Ranch dressing from Litehouse adds a ton of fresh herb flavor to the chicken. One Pan Creamy Ranch Chicken and Rice

If the weather is cold outside, there's nothing like comfort food to help keep the chill away! This One Pan Creamy Ranch Chicken and Rice tastes just like it sounds...delicious!

Ingredients

6–8 boneless chicken thighs

Kosher salt and freshly ground pepper

1 cup Litehouse Homestyle Ranch dressing

2 tablespoons olive oil

3 garlic cloves, minced

1 onion, chopped

2 cups low-sodium chicken stock

2 cups chopped kale

1 cup white long-grain rice

2 tablespoons Instantly Fresh Parsley

Directions

In a large mixing bowl season chicken with salt and black pepper. Add ranch dressing and marinate for 5 minutes. Remove chicken from marinade and pat dry with paper towels.

In a large skillet over medium-high heat add 2 tablespoons olive oil and sear chicken skin-side down until golden, about 5 minutes. Transfer to a plate skin-side up; set aside.

Drain skillet, reserving 1 tablespoon fat, and discard balance. Turn heat down to medium and cook garlic and onion for 2 minutes, until beginning to soften. Stir in stock, kale, rice, 1 teaspoon salt, and 1/2 teaspoon black pepper. Place chicken in rice mixture, skin-side up. Simmer until rice is tender, about 20 minutes.

Stir parsley. Serve immediately.
