    And did I mention how easy it is to make? I used a bag of Fresh Express® Sweet Butter Crunchy Blends which saved me time cleaning and chopping lettuce. I love the convenience!

  • Spicy Potato Skins Recipe

    I love making this easy appetizer recipe because nothing goes to waste. You use the potato skins for the recipe and the inside part can be used to make mashed potatoes or Shepherd’s Pie! This recipe makes 8 servings, but can easily be doubled or tripled if you need to.

    Prep the recipe ahead of time by baking the potatoes first and scooping out the soft middle portion. If I’m making it for a party or special occasion, I’ll start the recipe in the morning and finish it off just before I want to serve it.

  • Vegetarian Cobb Salad Recipe

    Despite the snowstorms still blanketing most of the country, I feel like I’m ready to move away from comfort foods and start making more fresh summer salads. I love a ton of color in my salads and try to mix in ingredients that are fresh for the season! Cobb salad is such a classic and many of the ingredients can be found year-round. As my goal for 2021 was to eat more plant-based meals, I turned the classic Cobb into a Vegetarian Cobb Salad.
