Motherhood is a tough job and most moms don’t get enough credit, especially from their kids as they are growing up. I only realized how much my mom did for me growing up, when I became a mother myself and especially after I had three young kids.

There are days when we are worn out and days when we are frustrated, but there are also those days that make us beam with joy. Those days make it worth the annoying days! What a joy it is to watch your child try their best in school or draw a beautiful picture for us. It feels like our hearts will burst with happiness when they tell us they love us; even just the act of watching them grow and develop their individual gifts and talents is incredibly rewarding. I look forward to Mother’s Day each year. It feels nice to get a little appreciation and I look forward to sharing with my mother and mother-in-law.  Now I’m older and realize everything they have done over the years and how hard motherhood really is.

Whether you are putting on a Mother’s Day brunch or just want to bless mom with a sweet treat that day, these fruit and yogurt parfaits using Litehouse’s Cream Cheese Dip are simple and delicious. If you already have Litehouse’s Vanilla Yogurt Dip on hand, you could use that instead. Spring is the perfect time for Mother’s Day. No matter how predictable it may be, mothers always love flowers on the special day. Spring also brings a variety of fresh, new fruits in season. It’s starting to be the perfect time for strawberries, mangos, pineapple, oranges and honeydew. Be creative! This parfait would be even more delicious with a bit of mint mixed with the fruit. Mother’s Day Fruit and Yogurt Parfaits

Serves 8-10 | Finish in 35 minutes

A delicious fruit and yogurt parfait for Mother’s Day Brunch! Lite and fresh for spring, and sweet for your wonderful mom!


4 cups of your favorite diced fruit,
18 oz. flavored Greek yogurt,
(1) 12 oz. tub Litehouse Cream Cheese Dip,
2 Tbls. lemon juice,

Cinnamon chips (optional),
3 whole-wheat tortillas,
½ cup sugar,
1 Tbls. cinnamon,
4 Tbls. butter,


For the fruit and yogurt parfait:

1. Mix Greek yogurt and Litehouse Cream Cheese dip in a bowl and set aside.

2. Dice the fruit and drizzle with the lemon juice.

3. Layer the yogurt mixture in a glass jar or cup, about 2 Tbls., followed by ¼ cup of fruit. Keep layering until you reach the top of your cup.

For the cinnamon chips:

1. Preheat oven to 425 degrees.

2. Mix the cinnamon and sugar in a small bowl and set aside.

3. Melt the butter in a small bowl

4. Cut the tortillas into 1-inch strips. Brush each side with butter and sprinkle with cinnamon and sugar.

5. Bake for 5 minutes on a baking sheet with rack insert or until crispy.
