I am the self-proclaimed queen of budget meals. I feed my family of six on a very tight weekly food budget without skimping on the nutrition! My number one secret to keeping dinners budget friendly? Chicken breast. I know what you must be thinking, “This chick is nuts! Chicken breast is expensive!”

The truth is you’re right, I am a little nuts but chicken breast doesn’t have to be expensive. If you buy bone-in chicken breast you can often find it on sale for $1/lb., compare this to the average $3/lb. for boneless chicken breast. Stock up when you find these sales and you are well on your way to cooking budget friendly meals every night of the week. When I pick up a $5 family pack of bone-in chicken breast I see enough meat for 2 meals, tons of chicken stock, and bonus chicken tenders. That’s a pretty incredible deal. With a few simple steps you too can get in on the money saving madness.

The first step is butchering. If you’re buying bone-in, it has to be done. Fortunately it is simple. One straight cut right in between the meat and the breast bone staying close to the bone as you can. Done! Throw the bones into a large stock pot along with a few gallons of water, a tablespoon of pepper corns, and a sprinkle of salt. Bring to a simmer and leave it alone for a few hours. Allow to cool, remove the bones and voila! You have a couple gallons of free chicken stock, and a house that smells amazing! With $2 being the average cost per quart of chicken stock you just saved some serious cash while lowering the cost of every meal you use it in. On the side of the chicken breast that was nestled against the bone you will find a thin strip of meat that easily separates from the rest. This is a chicken tender, usually priced at over $3/lb. You just got it for 1/3 of that price. Place your chicken tenders in a resealable bag in the freezer until you have saved up enough for a full chicken tender dinner.

Italian Orange Chicken with Roasted Sweet Potatoes

Serves 4-6 | Finish in 1 hour

Chicken is pounded thin and dredged in a seasoned flour. Pan fry until golden then make a pan sauce with orange, chicken stock, and basil. Chicken is simmered in the sauce until it thickens and served with a side of roasted seasoned sweet potatoes.


2-3 boneless chicken breasts halved,
½ c. parmesan cheese,
½ c. flour,
1 Tbsp. plus 1 ½ tsp. Litehouse Instantly Fresh Basil,
1 orange sliced in to thin rounds,
1 c. orange juice,
1 c. chicken stock,
1 garlic clove smashed,
2 shallots minced,
2 tsp. honey,
Salt and pepper ,
2 lb. sweet potatoes cut into ½ in. cubes,
Olive oil for drizzling,
1 tsp. Litehouse Instantly Fresh Italian Blend,


1. Preheat the oven to 425 degrees.
2. Toss the sweet potatoes with a drizzle of olive oil and the Litehouse Instantly Fresh Italian Blend. Season with salt and pepper.
3. Spread in an even layer on a baking sheet and roast in the oven 30-40 minutes, or until tender.
4. Meanwhile place the chicken pieces on a cutting board and cover with a layer of plastic wrap.
5. Use a meat mallet to pound the chicken until no thicker than ½ inch. Season pounded chicken with salt and pepper.
6. In a pie pan stir together the parmesan, flour, and 1 Tbsp. Litehouse Instantly Fresh Basil. Lightly coat the chicken with the flour mixture.
7. Heat 2-3 Tbsp. olive oil in a pan over medium high heat. Pan fry the coated chicken until golden brown on both sides. You will have to do this in batches. Remove the chicken from the pan and set aside.
8. Add the orange slices, garlic clove, shallots, and remaining 1 ½ tsp. Litehouse Instantly Fresh Basil to the hot pan. Stir until fragrant, about 1 minute. Add the orange juice and chicken stock, scraping the browned bits off the bottom as you stir.
9. Return the chicken to the pan. Lower the heat to medium and bring to a simmer. Simmer 20 minutes.
10. Remove chicken to a serving platter and garnish with the cooked orange slices. To the pan sauce add the honey. Salt and pepper to taste.
11. Spoon the sauce over the chicken and serve with a side of the roasted sweet potatoes.
