My husband used to eat fast food everyday over his lunch break. Eating take out each day was becoming expensive. I work from home, but that means I have easier access to things like ice cream and cookies and I am sometimes tempted to eat throughout the day.

I wanted my husband and I to eat a healthier diet and of course save money, so that’s when I decided to start meal prepping. Meal Prepping is when you prepare your meals for the next few days or week to maintain a healthy diet. You save money by having prepared meals ready to go and then there is no excuse to order fast food.

Weightlifters prep meals to ensure they are eating several, healthy, protein-packed meals throughout the day. Those who are trying to lose weight can pre-portion healthy ingredients based on recommendations from their doctor. Meal prepping is even a time-savior for those who are following the Paleo or whole foods diet. I spent a little under two hours last weekend and prepared about twelve lunches for my husband and I to eat throughout the week. Using Litehouse products, especially the Instantly Fresh herbs, means being able to add a lot of flavor without a lot of calories. I grilled the chicken, burgers and veggies because the weather is warm and it is National Grilling Month!

This weekend I made orange and soy glazed green beans, lemon-lime cilantro chicken, balsamic mixed vegetables and Italian turkey burgers and grilled them all at the same time. I like to grill my veggies in a grill basket - it brings such great flavor to the marinated vegetables. I then turned the recipes into these meals:

  • Italian Turkey Burgers over rice (or mashed cauliflower) with black beans and orange and soy glazed green beans.
  • Lemon-Lime Cilantro Chicken on a spinach salad with tomatoes and cashews with Litehouse Organic Ranch dressing.
  • Cilantro Chicken over rice (or mashed cauliflower) with roasted sweet potatoes and balsamic mixed vegetables.

Orange and Soy Glazed Green Beans, Lemon-Lime Cilantro Chicken, Balsamic Mixed Vegetables, Italian Turkey Burgers

Meal prepping is an easy way to make a ton of healthy meals for the week. Skip the take out for lunch and eat these delicious meals!

Ingredients

Orange and Soy Glazed Green Beans:

12 oz. trimmed green beans

¼ cup Litehouse Tangy Orange Citrus Dressing

2 Tbs. soy sauce

 

Lemon-Lime Cilantro Chicken:

5 lbs boneless skinless chicken breast

 3 lemons

 3 limes

 ¼ cup olive oil

2 Tbs. Litehouse Instantly Fresh Cilantro

 

Balsamic Mixed Vegetables:

 4 peppers of any color

1 lb. trimmed asparagus

 ½ cup Litehouse Organic Balsamic Vinaigrette

 1 Tbs. Litehouse Instantly Fresh Basil

 

 Italian Turkey Burgers:

1.5 lb. ground turkey

2 Tbs. Litehouse Instantly Fresh Italian Herb Mix

 1 Tbls. yellow mustard

Directions

1. Prepare all of the fruits and vegetables by trimming and slicing.

2. Prepare (3) large Ziploc bags for marinating.

3. Place all of the ingredients for each separate recipe in the three Zipoc bags.

4. Marinate at least 1-2 hours in the refrigerator.

5. Shape the Italian Turkey Burger mixture into at least six patties.

6. Preheat your grill to medium high-heat.

7. Cook the chicken breasts 10 minutes per side or until 165 F.

8. Cook the turkey burgers 5 minutes per side.

9. Roast the vegetables in a grill basket until cooked through, but still crisp. (OR) Roast at 425 for about 20 minutes.
