Marinated White Bean Salad Recipe

This Marinated White Bean Salad is a must for simple summer dining! Hearty and packed with plant-based protein, this salad is perfect as a light lunch, as a side dish to your favorite summer meal or on top of your favorite Mediterranean-inspired salad.

When it comes to simple dining, this recipe is king. Open a few cans of white beans, then drain and rinse. Add to a large bowl and add in chopped, jarred roasted red bell peppers, fresh chopped parsley, a generous squirt of fresh lemon juice and extra-virgin olive oil. As this salad gets so much flavor from the simple dressing of olive oil, lemon juice and Litehouse® Italian Herb Blend, make sure to use high quality olive oil—the fruitier, the better! Toss everything together, then let marinate for at least 5 minutes. This allows the freeze-dried herbs to rehydrate in the dressing and really allow for the flavors to pop!

From there, the possibilities are endless. I like to make a big batch of this in the beginning of the week as part of simple meal prep. It’s great on it’s own, straight from the fridge, or on top of a big green salad. It’s also great for grain bowls— especially with cooked grains like farro or quinoa, steamed greens or roasted broccoli.

White Bean Marinated Salad Recipe

Marinated White Bean Salad! This hearty white bean salad is perfect as a light lunch, side dish or on top of your favorite Mediterranean-inspired Salad. With just a handful of ingredients— canned beans, roasted red bell peppers, fresh parsley, extra-virgin olive oil, lemon juice and Litehouse® Italian Herb Blend.


  • 2 (15 oz.) Cans White Beans, drained and rinsed
  •  1/3 c. Chopped Roasted Red Bell Pepper
  •  1/3 c. Finely Chopped Parsley
  • 2 tsp. Litehouse® Italian Herb Blend
  • 2 tbsp. Fresh Lemon Juice
  • 1/4 c. Extra-Virgin Olive Oil
  • Pinch salt and pepper, to taste


  1. Place all ingredients in a large bowl and mix well to combine. Let sit for 5 minutes for flavors to marry, then taste and adjust salt and freshly ground black pepper to taste.
