It’s back-to-school time! Let’s talk about school lunch. This year I will be making five lunches from home for my five kids to bring to school, so I consider myself somewhat of an expert.
First things first, we need to talk about the basics: lunchboxes. We’ve been through a few lunchboxes over the years, but my favorite has been the PlanetBox. It’s my favorite for two reasons: it has separated compartments and the stainless steel makes it environmentally friendly and long lasting.
I used to pack snacks in plastic baggies, but I realized how many we went through and how it affected the environment. I switched to these awesome reusable sandwich bags found on Etsy and the kids love these better anyways! Now that you have the necessities and are ready to pack your lunch box, here’s a quick and healthy Fuji Apple Chicken Salad recipe. Chicken salad may not be a typical lunchbox meal, but this recipe is light with a touch of sweetness, so the kids love it. You can serve the chicken salad with apple slices, crackers or in a wrap. Litehouse’s award-winning Fuji Apple Dressing brings the yummy sweetness, and Greek yogurt is a healthy alternative to the typical mayonnaise.
Litehouse Foods believes healthy and tasty can go hand-in-hand, even in school lunches. That’s why Litehouse has partnered with The Chef Ann Foundation to create a healthy, delicious, Greek yogurt-based ranch dressing for schools. You can request that your school switch to Litehouse’s Ranch Greek Yogurt dressing! Find out more at the Chef Ann Foundation.
