Lighter Reuben Dip

Football season has returned and my family loves it! Unfortunately the fight to stay fit becomes much harder during this time of year. Football food can be a gut buster and so hard to resist at the same time. Sauce drenched meats, salty chips, creamy dips, cheese and bacon on nearly everything. Oh my, when will the line be drawn?! It's time we stop leaving the diets behind with the summer weather and carry our healthier eating habits right on through the fall.
My all time favorite game day dip is this little thing called Reuben Dip, have you two met? Chopped corned beef is usually mixed with calorie laden cream cheese, Thousand Island dressing, and mayonnaise, and then topped with tons of greasy cheese and sauerkraut. It is incredibly delicious and will throw the pounds on you just as quickly as you can say "more please"! I think Jon and I gained 5 lbs. the first football season we discovered this gem. It is literally irresistible and eating just a bite or two is impossible! Even though I haven't made this dish in a while, for obvious reasons, I miss it terribly. I crave it with every football game I watch. It's time to make this recipe over so I can enjoy it guilt free! With the help of my favorite cream cheese replacement, low fat cottage cheese, and Litehouse's line of lower calorie dressings I can love my Reuben Dip and eat it too!
