Lemon Dill Green Beans Recipe

I am a huge fan of cooking with herbs. Herbs are a great way to compliment any dish without loading on the sodium.  One of the biggest problems that I have with fresh herbs is that I can never use them in enough time and they go bad and end up in the trash.  Sometimes I wish that grocery stores had an herb bar, much like a salad bar. This would really be ideal for those times where you need a small amount of a few different types of herbs without the waste. I suppose that’s how they make their money. Or maybe I just came up with the world’s greatest idea. My point is, herbs are lovely but tend to be expensive.

There are certain times that fresh herbs are necessary, such as basil pesto.  There are many other times where good, freeze dried herbs will do, such as Litehouse Instantly Fresh Herbs.  These are a great alternative to fresh herbs and will still infuse your cooking with a burst of delicious flavors. Dried herbs tend to be more concentrated with flavor so be cautious when substituting freeze-dried in for fresh. There are just a few tips that I have in regards to freeze-dried herbs:

  • Store your herbs out of the sun, in a cool, dry place. This will help avoid getting moisture in the jars and maintain the freshness.
  • Keep an eye on the expiration date of your freeze-dried herbs. Herbs will begin to use their color and potency and turn almost bitter as time goes on.
  • Most herbs will come in tightly sealed glass or plastic jars. If you’re buying in bulk in bags, be sure to transfer the herbs to a tightly sealed container to increase the longevity of the herbs.

While I do enjoy the freshness of herbs straight from the garden, I don’t enjoy the waste that comes along with buying an entire bunch of cilantro at the grocery store. Lemon Dill Green Beans

Serves 4 | Finish in 15 minutes

Freeze dried herbs can enhance your vegetables without using sodium. These lemon-dill green beans are infused with Litehouse Instantly Fresh Dill and Red Onion.


12 oz fresh green beans,
Juice & zest of 1 lemon,
1 tablespoon Litehouse Instantly Fresh Red Onion,
1 teaspoon Litehouse Instantly Fresh Dill,
2 tablespoons olive oil,
Salt & Pepper,


1. In a medium bowl, mix together the juice and zest of the lemon, red onion and dill. Allow the mixture to sit and infuse and then mix in the olive oil.

2. Steam the green beans for 2-3 minutes and drain.

3. Mix the beans in with the lemon mixture and toss to coat. Plate and serve.
