Instant Herb Garden Fast Italian Herb Focaccia

“I beg your pardon. I never promised you an herb garden,” teased my husband after I fussed and complained about my partitioned-off little corner of the backyard getting brutally mowed over “on accident.” In his defense, I guess my scrappy, scorched attempt at basil, parsley and oregano did resemble weeds more than a crop of something actually edible. As the classic song goes, “along with the sunshine, there’s gotta be a little rain sometime” and my part of the country has been in a drought seemingly forever. So, even if I did have a green thumb, growing a lush herb garden under our once-a-week watering restriction would have been a miracle from Mother Nature.

But, thankfully, I have a fully-stocked herb patch in my pantry that supports my recipe creativity when I need “a little pinch of this” and a “little pinch of that.” The line of Instantly Fresh Herbs from Litehouse Foods has come to my rescue on many occasions, conveniently adding aromatic flavor to my dishes in copious countryside style.  Plus, being the frugal type who hates wasting, I love the fact that I’m not tossing out wilted bunches of expensive store-bought herbs when I only needed a few tablespoons worth. I measure out exactly how much of the freeze-dried herbs I need (or just eyeball it) and then close back up the bottle for extended storage in the cupboard. These “as close to fresh as you can get” herbs are always in season!

Last night, I made a delicious Fast Italian Herb Focaccia to pair with our green salad. Because this quick bread recipe doesn’t use yeast, it is super speedy to whip up, bake and get on the dinner table – less than 30 minutes, start to finish!  I used Instantly Fresh Garlic and Instantly Fresh Italian Herb Blend to complement the flavor profiles of the lasagna I was serving up for dinner that evening. But, to suit your menu, use any combination of the 15 Instantly Fresh Herbs currently available.

Fast Italian Herb Focaccia

Serves 6 | Finish in 30 minutes

This delicious no-yeast, quick bread takes advantage of freeze-dried herbs for year-round convenience (or for those of us without a green thumb). Pair with a side salad and serving of lean protein for a simple yet super-yummy supper.


2 cups all-purpose flour,
2 tsp baking powder,
1 tsp table salt,
1 cup water,
1 Tbsp olive oil,
¼ cup shredded parmesan,
1 tsp coarse sea salt,
1 tsp Litehouse® Instantly Fresh Garlic,
2 tsp Litehouse® Instantly Fresh Italian Herb Blend


Preheat oven to 425 degrees F. Grease a 9x13 inch baking pan. Sift together flour, baking powder, and table salt into large bowl; add to the water. With spatula, stir until dough it is well-combined. If needed, turn dough out onto floured surface and knead until it forms a cohesive ball. Plop dough into greased baking pan. Using oiled spatula, spread dough down to 1/2-inch thickness, ensuring there are holes. Rub the top and sides of dough with olive oil. Sprinkle parmesan cheese even over the top. Season with sea salt, Instantly Fresh Garlic and Instantly Fresh Italian Herb Blend. Bake in preheated oven for approximately 20 - 22 minutes, or until turning golden brown. Cut into 12 rectangles for serving (2 pieces per serving).
