Half-Time Snacks: Appetizers in 20 Minutes Or Less

Well it's March and that can only mean one thing: March Madness. Or in the world of Litehouse Foods, Munch Madness! Sixteen products all pinned up against one another to be named the best. But who are we kidding, they are all pretty amazing.

To coincide with the annual basketball tournament, Litehouse Foods is launching their own tournament of champions including some of their best sellers. The defending champion is the classic Homestyle Ranch; there are some new favorites including OPA Feta Dill and Organic Raspberry Lime Vinaigrette. Out of the 16 products, I couldn't really pick a favorite but I did incorporate a few of these flavors into some quick appetizers that can be made during half-time. Before the days of DVR and pausing television, people had to do things during commercial breaks or during the half-time of a basketball game. I know it sounds crazy, but it's true.  Twenty minutes isn't a lot of time to refresh your snacks for your party but it can be done and I have three delicious snacks to share today.  All three of these snacks can be made in twenty minutes or less and put a twist on some of my favorite game-time snacks.

As much as I'm not a huge fan of most sports (ah-hem, football) I do really get into college basketball. Going to a college that only had basketball as a sport I found myself attending a lot of games and learning the terminology. Well, some of the terminology. I know the basics: three-pointers, slam dunks and the rounds of March Madness. I also knew that time-outs meant it was a good time to go to the concession stand and a handful of confetti was essential for the first shot of the game. Beyond that, don't ask me a lot of questions.   So where were we? Oh, my half-time snacks! Three-Point Veggie Pizza, Slam Dunk Cheese Ball and Final Four Layer Dip Cups. See what I did there? Appetizers in 20 Minutes Or Less

Serves Cheese Ball - 5; Veggie Pizza - 8; Dip Cups - 5 | Finish in Cheese Ball - 20 min; Veggie Pizza - 20 min; Dip Cups - 20 minutes

Cheese Ball - This zesty cheese ball is lower in fat and calories and perfect for spreading on crackers or pretzels.
Veggie Pizza - This healthier version of pizza is packed with flavor and sure to please anyone.
Dip Cups - Bite sized snacks are perfect for any basketball game. These dip cups are easy to prepare and perfect for snacking.

Ingredients

Cheese Ball,
8 ounces low fat cream cheese at room temperature,
¼ cup OPA Ranch,
1 tablespoon Litehouse Instantly Fresh Jalapenos,
2 cups shredded cheddar cheese,
Crackers and pretzels to serve,

Veggie Pizza,
1 package crescent rolls,
1 cup Litehouse Dilly Dip,
2 carrots diced,
1 cup chopped broccoli,
1 cup chopped cauliflower,
1 small cucumber diced,

Dip Cups,
15 mini phyllo cups,
1 15oz can black beans drained,
¼ cup Litehouse Lite Salsa Ranch,
1 tomato chopped,
1 cup lettuce chopped,
Litehouse Jalapeno Ranch,

Directions

Cheese Ball

1. Combine the cream cheese, OPA Ranch, Instantly Fresh Jalapenos and 1 cup of the cheese into a food processor. Pulse until the ingredients are combined.

2. Scoop the dip onto a piece of plastic wrap and fold the wrap around the mixture and form into a ball.

3. Lay the remaining cheese onto a plate and roll the cheese ball around in the cheese to coat. Serve the cheese ball with pretzels and crackers.

Veggie Pizza

1. Roll out the crescent dough onto a baking sheet, keeping the triangles connected. Press the seams together and bake at 375 degrees for 10 minutes.

2. Cool slightly and then spread the Dilly Dip onto the crust. Top with the veggies.

3. Cut the pizza into triangles and serve.

Dip Cups

1. Lay out the phyllo cups onto a baking sheet and bake at 350 degrees for 5 minutes.

2. Meanwhile, combine the black beans along with the Lite Salsa Ranch in a blender and blend until smooth.

3. Fill each phyllo cup with a tablespoon of black bean dip. Top with lettuce, tomatoes and a drizzle of Jalapeno Ranch and serve.
