Grilled Chicken Avocado Ranch Salad Recipe

This salad is perfect during warm summer months when you can get the freshest mangoes and freshly picked corn to top it off. If you’re not a grilled chicken expert, you can easily become one with a few tips.

  1. Choose chicken breasts that seem uniform in size and thickness. If they seem to be on the thicker side, you can filet the chicken breast before marinating to lessen the cooking time or pound the chicken to make the thickness more uniform.
  2. Marinating the chicken is key to achieving juicy chicken breasts loaded with flavor. Keep the chicken in the marinade for at least 30 minutes but up to overnight.
  3. Before you grill the chicken, prepare the grill surface. Make sure that it is clean of debris and rub the grates with a bit of olive oil to keep the chicken from sticking.
  4. Stay away from high heat when you grill – You’ll want to cook the chicken over indirect heat so that you do not burn the outside before the inside is cooked through.

Avocado Ranch Grilled Chicken Salad Recipe

Summertime is the perfect time to grill at every meal and you can keep things healthy with a grilled chicken salad. Top off your salad with creamy Avocado Ranch dressing for a flavorful finish.

Ingredients

  • 1 lb. boneless, skinless Chicken Breasts
  • ¼ c. Olive Oil
  • 1 tsp. Cumin
  • 1 tsp. Garlic Powder
  • 1 tsp. Chili Powder
  • 1 tsp. Salt
  • Juice of 1 lime - plus additional lime wedges for garnish
  • 6 c. Chopped Romaine Lettuce
  • ½ c. White Corn
  • 1 c. Black Beans
  • 1 Mango, thinly sliced
  • 1 Avocado, diced
  • 1 c. Tomato Halves
  • ¼ c. Cilantro, roughly chopped
  • Litehouse® Avocado Ranch dressing to taste

Directions

  1. Combine the olive oil, cumin, garlic powder, chili powder, salt and lime juice in a large zip-closure bag. Add in the chicken breasts and marinate at room temperature for at least 30 minutes.
  2. Preheat gas or charcoal grill to medium-high heat. Remove the chicken breasts from the marinade and grill for 4-5 minutes on each side, or until internal temperature reaches 165° F. Allow the chicken to rest for 5 minutes, covered lightly with foil.
  3. While the chicken rests, prepare the salads by dividing romaine lettuce, corn, black beans, mango, avocado and tomatoes between the bowls. Top with sliced, warm chicken, cilantro and Litehouse® Avocado Ranch dressing to taste.
