• Hatch Green Chile & Queso Fresco Breakfast Bake

    I’m from Texas, born, raised and still living here today. Admittedly, we Texans get a little proud of our state, especially when it comes to the food. We have the best barbeque, chicken-fried steak and pecan pie around, plus anything Tex-Mex or made with Hatch green chiles will make you kick up your boot heels and shout “yee-haw”! Yeah, yeah, Hatch green chiles may hail from Hatch, New Mexico, but we’ve adopted them with cult-like worship into our food culture.

  • Chicken Bacon Ranch Potato Skins

    I hate to even talk about the dreading ‘S’ word but I’m going to do it because I spotted a display at my local Target this past weekend….school season. I keep asking myself where this year has gone and the fact that it’s nearly August has me gasping for breath! I don’t have children but I have a lot of friends that talk about the fact that it’s almost back to the grind of school season and how hectic their lives get come fall. I decided that it was time to make a snack for all my friends out there with children going back to school soon: Chicken Bacon Ranch Potato Skins.

  • Spicy Chopped Salad

    It is much too hot to cook these days, especially during the middle of the day lunch rush!  The kids are home from school, hungrier than ever and I'm trying my best to get vacation ready.  I find myself wondering why I'm trying so hard since we're heading to an all inclusive resort.  Land of buffet and never ending slushy drinks!  In any case, a person should eat more vegetables so for my latest spicy chopped salad, I added as many vegetables as I had in the fridge.  It's a delicious mixture of different colors and textures with a spicy kick from the Jalapeño Ranch Greek Yogurt Dre
