• Beef Blue Cheese Monte Cristo with Cherries

    A Monte Cristo conjures up special memories of my childhood, it’s a sandwich that my dad would often make me by special request or I would order on the rare occasion we dined out. It was a far cry from my daily PB&J at the time.  A traditional Monte Cristo features ham and melted cheese between bread that had been soaked in an egg-milk mixture and fried in the style of French toast (another of Dad’s specialties). Oh, and a topping of raspberry jam as a sticky-sweet finishing touch!

  • Hatch Green Chile & Queso Fresco Breakfast Bake

    I’m from Texas, born, raised and still living here today. Admittedly, we Texans get a little proud of our state, especially when it comes to the food. We have the best barbeque, chicken-fried steak and pecan pie around, plus anything Tex-Mex or made with Hatch green chiles will make you kick up your boot heels and shout “yee-haw”! Yeah, yeah, Hatch green chiles may hail from Hatch, New Mexico, but we’ve adopted them with cult-like worship into our food culture.

  • Chicken Bacon Ranch Potato Skins

    I hate to even talk about the dreading ‘S’ word but I’m going to do it because I spotted a display at my local Target this past weekend….school season. I keep asking myself where this year has gone and the fact that it’s nearly August has me gasping for breath! I don’t have children but I have a lot of friends that talk about the fact that it’s almost back to the grind of school season and how hectic their lives get come fall. I decided that it was time to make a snack for all my friends out there with children going back to school soon: Chicken Bacon Ranch Potato Skins.
