Easy Butterscotch Caramel Pumpkin Poke Cake

Every year I find myself slaving away struggling to make the Holidays spectacular. Everything is homemade from scratch, hand decorated, and hand painted…smack my hand to my forehead! Why do I do this to myself? I always end up taking on too much and stressing over the Holidays instead of enjoying them.

Not this year! I am fully embracing the idea of semi homemade this holiday season. What is semi homemade? It’s where you take a little help from the store, mix it with the love of easy homemade touches, and your friends and family are none the wiser! It’s like using store bought pie crust but filling it with an amazing homemade filling, or jazzing up boxed cake mix for an easy yet spectacular dessert.

I’ve been playing with this semi homemade idea in the kitchen and my recent favorite is a traditional southern Pumpkin Poke Cake. I take a simple yellow cake mix and add homemade touches that give it a “homemade from scratch” flavor. Holes are poked in the cake right after baking and caramel is poured over the hot cake melting into the holes. Top it with whipped cream and this is a surefire winner; everyone in my life loves it!

As Thanksgiving and Christmas parties quickly approach I found myself needing to make this poke cake pretty enough to serve to guests. Poke cakes usually look pretty “rustic” as they are served right from the baking dish and begin looking very unappetizing as more scoops are served. How do I keep this looking “fancy”? A Bundt pan! I have never seen an ugly Bundt Cake, and when a perfectly sliced cake is then topped with warm caramel and a dollop of whipped cream it can be simply breathtaking. The beautiful Butterscotch Caramel Pumpkin Poke Cake is born!

Even though I’m an avid baker, I am hate making Caramel Sauce so I took a helping hand from Litehouse and their amazing Butterscotch Caramel Dip. The only thing that goes better with pumpkin than caramel is Butterscotch Caramel! The buttery flavor enhances the spices in the cake and just takes the whole dessert over the top.

Easy Butterscotch Caramel Pumpkin Poke Cake Recipe

Serves 12-14 | Finish in 55 Minutes


1 box yellow cake mix
4 eggs
1 c. pure pumpkin puree
1/2 c. brown sugar
1/2 c. vegetable oil
1/4 c. water
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. ground clove
Litehouse Butterscotch Caramel Dip
1/2 c. heavy whipping cream
2 Tbsp. powder sugar


Preheat the oven to 350 degrees and grease a non stick bundt pan with non stick baking spray.
Whisk together the cake mix, eggs, pumpkin, sugar, oil, water, cinnamon, nutmeg, and clove until well blended.
Pour into the prepared bundt pan and bake in the preheated oven for 45 minutes.
Remove cake from oven and immediately use a straw to poke holes in the underside of the cake.
While cake is still piping hot spread 1/2 c. of Litehouse Butterscotch Caramel Dip so it melts into the holes.
Allow to cool before removing from pan.
Spread remaining Butterscotch Caramel Dip over top of cake.
Use an electric mixer to beat the heavy cream and powdered sugar until peaks form.
Serve cake slices with the fresh whipped cream.
