Where has the time gone? The holiday season is in full swing, it can’t be avoided! Every store I enter has the tunes going, decorations are hung and all my favorite things to buy are front and center. I can’t even help myself; I filled a cart today in record time. Table cloths, mitt and toque baskets, cute little penguin pajamas and all the other “must haves” including some nice new appetizer plates for upcoming holiday parties. We’ve been so busy lately with work and volunteering I needed a little retail therapy!
One of the items I make most often for serving at dinners or holiday parties are stuffed mushrooms. I always order them at fancier restaurants and love recreating them at home! They only take a few ingredients and are really easy to make. The main star here is the Crab and Litehouse Blue Cheese dressing. What a combo!
Start by preparing the filling and let it sit it the fridge for at least a few hours so the garlic can soften up in the cream cheese mixture. Your guests will think you went all out making these but you can get a head start and have the filling done the night before your dinner. It’s a real time saver that allows you to have more socializing and less time stressing in the kitchen! A glass of wine also works.
When you’re ready, wipe the mushrooms clean with a cloth or paper towel and pop the stems out. Place them cavity side up in a baking dish. Use a spoon and generously fill them with the cheese mixture. I like to pile mine high! Bake the mushrooms for 30 minutes and you’re ready to serve.
The stuffed mushrooms are great served straight from the oven or cooled to room temperature. They’re always gone in a hurry!
