Cobb Salad Wraps

You know that grocery shopping rule “Shop the perimeter of the store” Well, I thought for this Cobb Salad Wrap I’d give it a try.  Every item found on the ingredient list was picked up on the outer most isles of the store.  Turns out it's pretty easy to keep away from those tempting middle chip and cookie filled isles!  My favourite refrigerated dressing is no exception.  I love that it’s conveniently located near the salads instead of sitting on a shelf.  I never used to worry about things like shelf stable dressing but now it just grosses me out.  What’s in that stuff and why is the expiry date way in the future?

Buying refrigerated dressing makes me feel much better.  They’re made fresh and there is just as many flavour options.  It’s a winning combination for all those salads and fresh vegetables.  We have some gluten sensitivities in our family so it’s nice to check out the Litehouse Foods website. There are little icons listed near each of the products that show if they are Gluten free, non GMO, organic and low calorie.

While I don't mind eating a salad most days, wraps are a great way to enjoy a traditional salad on the go.  Every now and then I add a different themed wrap in the kids lunch kits.  They’re just a nice way to break from the ordinary.  For my Cobb salad wrap I started out with large whole wheat wraps.  Always a good start!  I layered some chunky bleu cheese dressing then piled on the rest of the salad toppings.  Deli turkey, lettuce, tomato, chopped egg and avocado and of course some turkey bacon!  My preferred splatter proof ingredient when I’m trying to keep a recipe on the light side.
