Cinnamon Yogurt Coffee Cake

I’m not a Valentine’s Day person in the sense that I look for flowers, candy, diamonds, or an expensive dinner. Although all of those would be nice. But I like Valentine’s Day because it’s a good time for to pop into the lives of my mom, my niece, my husband and just tell them that I’m thinking about them. I like to send my niece a little card that she would enjoy and I like to make dinner with my husband for a date-night at home. I also really like to wake him up in the morning with a delicious treat to enjoy with his coffee and my new favorite treat is my Cinnamon Yogurt Coffee Cake!
I love how adding Greek yogurt to baked goods can cut down on fat and calories while still making them moist and delicious. I swapped out some of the oil in this coffee cake for a mixture of plain Greek yogurt and Opadipity Cinnamon Swirl Greek yogurt dip. The dip adds just a hint of toasted cinnamon flavor to the cake mixture and creates dense cake that your entire family will enjoy. Additional cinnamon is added into the streusel layer of the cake, giving it a sweet and crunchy texture.
You can prepare this cake the night before so that when you wake up on Valentine’s Day morning it’s ready to serve! You can choose to add extra cinnamon to your streusel if you’d like and double up the streusel if that’s your taste. This cake takes less than 1 hour to prepare and bake and can be made in a bundt pan or a round cake pan.
I would recommend drizzling on the icing right before serving and be sure to store the cake in an air-tight container to keep the cake from drying out. Use a full-fat plain Greek yogurt for maximum flavor. Serve this cake with a hot, fresh cup of coffee enjoy your Valentine’s Day morning with your loved ones!
