Chopped Greek Salad Wraps

One of the things that I love most about the summer is the fresh produce that seems to come in an endless supply. Between the farmer’s markets and garden fresh crops, there never seems to be a shortage of fresh herbs and vegetables.

96-0677 One of the things that I have been most excited about this summer is the fact that I just moved into an adorable new home and I finally can have my own garden! Up until now I’ve been an apartment dweller and have tried and tried to grow crops in pots and it just never seems to work out. One of the first things that I did when I moved into my new home is plant a little garden filled with fresh herbs, tomatoes, peppers and cucumbers. When you’re a food blogger and lover of all things fresh, that’s what you do. Here’s to hoping that the tomatoes grow properly this year!

I fully intent to harvest my garden until my stomach cannot take another tomato or cucumber. And you can only imagine the amount of salads that I’ll be eating this summer! One of my most favorite salad combinations is of a Greek variety. There’s nothing more delicious than crisp romaine, cucumbers, tomatoes, Kalamata olives and pepperoncini peppers! Topped off with warm, grilled chicken and feta cheese and you have yourself a meal. And while I love a good salad, I also love a good salad that you can eat on the go which is why I’m wrapping this one up in a tasty tortilla.

Wraps are one of my favorite ways to eat healthy while on the go. It’s nice to put a tasty salad into a flour tortilla that you can take to the beach or park and you can eat it without utensils. Topping off this chopped Greek salad with a drizzle of Litehouse Greek dressing and a sprinkle of feta cheese crumbles completes this handheld meal.  What are some of your favorite ways to bring salad on the go?

Chopped Greek Salad Wraps

Serves 2 | Finish in 10 minutes

There is nothing healthier than the ability to bring a salad on the go. These Chopped Greek Salad wraps are perfect for a summer outing!

Ingredients

2 cups romaine lettuce (chopped)
1 medium tomato (diced)
¼ cup cucumber (diced)
10 Kalamata olives (sliced)
2 pepperoncini peppers (sliced)
¼ red onion (thinly sliced)
1 cup grilled chicken (diced)
2 large flour tortillas
¼ cup Litehouse® Feta Cheese Crumbles
4 Tbsp. Litehouse® Greek dressing

Directions

1. Combine the lettuce, tomato, cucumber, Kalamata olives, pepperoncini peppers, red onion, chicken and feta cheese in a large bowl and toss to mix. Drizzle the salad mixture with the Litehouse Greek dressing.

2. Lay out the tortillas on a flat work surface. Divide the salad mixture between the two tortillas.

3. Tightly rolls the salad into the tortillas, folding the bottom into the wrap to keep the salad from falling out. Serve immediately.
