Chipotle 7-Layer Dip

My husband can never remember that Memorial Day falls at the start of summer and Labor Day closes out summer. He has resorted to calling these special days the ‘first holiday in summer’ and the ‘last holiday in summer.’ He has no disrespect for what these days represent but he just can never get the two dates straight! As we approach the ‘last holiday in summer’ I started to look over our calendar and realized that we have three gatherings to attend over the holiday weekend! I needed a quick and easy recipe that I could bring to all three parties so I create a delicious Chipotle 7-Layer Dip packed with flavor and made with ease.

My usual go-to dip is taco dip. I feel like that dip appeals to everyone’s snack-tooth but also has a lot of fat and calories from the sour cream, cream cheese and shredded cheese. I decided to lighten things up with this Chipotle 7-Layer Dip that blends together black beans and Ranch Dip for the base and a second layer of only dip to pile on the flavor. Adding a layer of plain mashed avocado and a light layer of cheese keeps this dip lower in fat and calories than many other dips.

With the holiday weekend coming up you might be looking for other inspiration for any parties that you might be hosting or attending. Here are some of my other favorites from the Living Litehouse blog, but I highly recommend the Chipotle 7-Layer Dip!
