Caesar Salad with Parmesan and Amaranth Crisps Recipe

According to the Whole Grains Council, Amaranth was first used by the Aztecs between 6,000 and 8,000 years ago. Amaranth is high in iron and potassium, is naturally gluten-free, and is considered a protein powerhouse at about 13-14% (slightly more protein than the popular Quinoa)!

I love all of those health benefits, but the coolest thing about Amaranth is you can pop it like popcorn! I experimented with popping this superfood grain a few months ago when I made these Popped Amaranth Protein Balls.

I must admit I burnt my first two batches, but I finally figured out a few tricks to popping Amaranth:

  • Make sure your pan is really hot. Do not add oil.
  • Only add 1 tsp. (or less) of Amaranth in the pot at one time. Pop that batch and remove to a separate bowl before starting on a new batch.
  • Popping Amaranth only takes a few seconds.

This is a recipe for a simple, traditional Caesar salad with a few small twists. Parmesan crisps are simply Parmesan melted in the oven until crispy. They are often found in salads or accompanying soups, and by adding popped Amaranth in these crisps, you add a fun texture and of course all of the health benefits Amaranth has to offer.

Caesar Salad with Parmesan and Amaranth Crisps

Serves 6-8 | Finish in 25 minutes

Amaranth is an ancient “Super Grain” that is gluten-free and filled with protein. You can pop it like popcorn!

Ingredients

(2) 9 oz. bags of chopped romaine lettuce,
¼ cup Litehouse Instantly Fresh Salad Herb Blend,
1 rotisserie chicken breast or two cups of cooked chicken (optional),
½ cup Litehouse Organic Caesar Dressing,
1/3 cup Amaranth,
½ cup shredded Parmesan cheese,

Directions

1. Heat a stockpot on high heat. When the pan is hot and a drop of water can sizzle on it, drop the Amaranth and pop one teaspoon at a time. This can be done ahead of time.
2. Preheat oven to 400. On a greased baking sheet or silicone baking mat, separate the Parmesan into small piles. Place 1 tsp. of popped Amaranth on the top of the Parmesan.
3. Bake 3-5 minutes.
4. Place romaine, herbs, Caesar dressing, chicken, and Amaranth crisps in a bowl. Serve.
