Back-to-School Waffled Pepperoni Grilled Cheese Lunch

It is back-to-school time again! Some moms look forward to back-to-school and others dread it. Which type are you?  The school year always seems busier for us. It’s time to wake up early, pack lunches, do homework, play sports, sign papers and attend school functions.

When I only had one child, school lunch was a breeze. Colton would eat the school lunch most of the time and once in awhile he would bring a simple lunch from home. Now that I have three kids with very different tastes, I am packing lunches from home more often. Since I am packing several lunches a week, I try to make sure they are healthy and easy to make, but still something my kids will eat.

My kids loved this waffled pepperoni pizza grilled cheese and now will probably want all of their sandwiches “waffled!” Greasy chips won’t be missed because these baked sweet potato chips are a delicious alternative. (Even more delicious when you dip them in the new Oppadipity Chipotle Ranch Greek Yogurt Dip!) Marinated broccoli and mozzarella is a good way to get more greens in a picky eater’s diet. Pepperoni Waffled Grilled Cheese, Marinated Broccoli and Mozzarella and Baked Sweet Potato Chips

Serves 1-2 | Finish in 34 minutes (plus marinating time)

It’s back-to-school time already! Here’s a delicious and healthy lunch idea for kids.


Pepperoni Waffled Grilled Cheese, 2 slices wheat bread, ½ cup shredded Colby Jack Cheese, 6 turkey pepperoni slices, ½ tsp. Litehouse Instantly Fresh Italian Herb Blend, Marinated Broccoli and Mozzarella, 1 cup broccoli, 1/2 cup fresh mozzarella pearls, ½ cup Litehouse Organic Balsamic Vinaigrette, Baked Sweet Potato Chips, 1 sweet potato, 1 Tbls Olive Oil, 1 Tbls Honey, ¼ tsp. cayenne pepper, dash of salt and pepper, 1 tsp. Litehouse Instantly Fresh Thyme,


1. Preheat a waffle maker and spray with non-stick spray. Place bread, cheese, Italian Herb seasoning, pepperoni slices in order and top with remaining slice of bread. Cook until golden brown. 2. Preheat oven to 450. Slice sweet potato with a mandolin slicer then toss with oil, honey and thyme. Bake for 7 minutes. Flip the sweet potatoes and bake 7 minutes more. 3. Place the broccoli and mozzarella in an airtight container. Pour the balsamic vinaigrette over the broccoli and cheese and refrigerate overnight.
