The Appetizer Pie For All Your Holiday Entertaining Needs

What I love about his hot hors d'oeuvre, aside from the bold sweet and savory taste, is that it’s one of those dishes that looks like you went “all out,” but really is so simple to make – that can be your little secret. Refrigerated pie dough, dried fruit that requires little prepping, and a couple rounds of Gorgonzola Center Cut from Simply Artisan Reserve let you knock out this recipe in minimal time, with maximum results.

Appetizer Pie with dried fruit

A 6-inch diameter pie dish is fitted with one sheet of convenience refrigerated pie dough. Since the pie pan is smaller than standard-size, there will be excess dough to trim off around the edges. If desired, you can use these leftovers to cut out decorative shapes to rim the crust or roll out and slice into “crackr’ squares to serve alongside the finished recipe.

After the crust is par-baked, simply stack up two center cut pieces of Gorgonzola cheese (drizzled with honey between) in the center and then fill in the gaps around the edges with chopped up dried fruits – dates, cranberries, golden raisins . . .or whatever you prefer. Next, return to oven for a few more minutes to finish baking the crust and softening the cheese. Remove, drizzle with more honey and top with some fresh thyme, if desired! Let guests spread onto crackers, bread or apple slices with one of those cute spreader knives or break off chunks of the crust and eat that way!

Gorgonzola & Dried Fruit “Pie”

1 refrigerated pie crust, thawed (package usually contains two, save other for use later)
2 5-ounce containers Gorgonzola Center Cut from Simply Artisan Reserve
1 cup assorted dried fruits (dates, raisins, cranberries, apricots, etc.), coarsely chopped
¼ cup honey, divided
Optional: 1 teaspoon fresh thyme leaves


Pre-heat oven to 425 F degrees.

Gently unroll thawed pie crust and press down into pan, with dough overhanging the rim. Use knife to trim dough around edges and use this excess to create decorative shapes for the crust edge. With the tines of a fork, lightly pierce the bottom of pie crust to keep it from puffing up while baking.

Place crust in oven and par bake for 8 minutes or until just starting to turn very lightly golden. Remove from oven, but leave heat on.

Add one piece of center cut Gorgonzola in middle of pie crust, drizzle with 1 tablespoon of the honey. Top with remaining piece of Gorgonzola.

Pack the gap surrounding pie edge and cheese with chopped dried fruit. Return to oven to bake for 5 more minutes, or until crust golden brown and cheese softening.

Remove from oven, drizzle fruit area and top of cheese with remaining honey. Top with thyme, if desired.

Serve with crackers, bread or apple slices.
