5 Minute Asian Noodle Bowl

I'm always searching for new ways to get more vegetables into my kids. One day they love a dish and it's "the best thing I've ever eaten". A week later they are moaning and groaning while turning up their noses to the exact same dish. While it certainly keeps me on my toes, it can be so frustrating. How do you get kids to eat their vegetables?

Right now in our household it is all about giving them choices. A dish that is chock full of vegetables but allows each kid to pick their veggies of choice seems to be our new winning equation. My latest, and our current favorite "pick your own vegetation" dish is this incredible 5 Minute Sesame Ginger Noodle Bowl. You read it right; this meal is ready in only 5 minutes and will have children delighted to eat their own creations. Quick cooking angel hair rice noodles are the base for this super quick noodle bowl. All that's left to do is open as many packages of prepared vegetables as you'd like to create a vegetable buffet. In our house we have one simple rule, pick as many vegetables as you'd like but you must choose at least three. This rule helps insure that each of my kids is forced to put together a nutritionally rich bowl. The simple act of giving them the choice of what goes into their noodle bowl keeps them excited to eat it up!

 In the past sauces for Asian dishes such as this Sesame Ginger Noodle Bowl have been a bit of a headache when I simply want a quick and easy dinner. Peeling and grating ginger, toasting sesame seeds, mincing garlic, a dash of 5 different ingredients, a drizzle of this, a pinch of that. Making a great sauce turns into an ordeal. 5 Minute Asian Noodle Bowl

These fresh and simple Sesame Ginger Noodle Bowls will have a healthy dinner on the table in only 5 minutes! Quick cooking Asian Angel Hair pasta and prepared veggies are the secret to making dinner time easier than ever.

Ingredients

1 package Angel Hair Rice Noodles (or any of your thin cut rice noodles), 1 bottle Litehouse Toasted Sesame Ginger Dressing, 1 bag snow peas, 1 bag matchstick cut carrots, 1 container sliced cucumber, 1 container sliced bell pepper, Asian chili sauce for serving,

Directions

Place rice noodles in a large microwave safe bowl. Add enough hot water to cover noodles and cook in the microwave for 5 minutes. Drain the noodles and stir in 1/2 c. Toasted Sesame Ginger Dressing. Fill bowls with dressed noodles and top with desired vegetables. Serve with extra dressing and your favorite Asian Chili Sauce.
