12 Amazing Meals Prepped in One Day For The Rest Of The Week

Meal prepping saves money and ensures you eat healthy, homemade meals throughout the week instead of resorting to drive-thru. Over the past few years I have created six delicious recipes for Litehouse that you can easily meal prep in one day. Everyone pinned, shared and commented on those like crazy! We decided to make three more meal prep recipes that you can add to the list. You can pick and choose from below what recipes you’d like to make for the week.

These three new recipes: balsamic chicken, cajun steak and feta dill tuna can be done start to finish in less than a few hours. To make prep time go smoothly you can break them into three steps: initial prep, roasting, and pan frying. Don’t let cooking three meals at once overwhelm you!

12 Amazing Meals Prepped in One Day:

Initial Prep (Step 1)
• Make the quinoa
• peel and dice the sweet potatoes, peppers and jalapeños.
• wash the lettuce
• dice the red pepper
• trim and marinate the steak
• marinate the chicken

Roasting (Step 2)
• roast the carrots
• roast the sweet potatoes
• Add the peppers and jalapeños

Pan Frying (Step 3, while everything is roasting in the oven)
• Pan fry the chicken
• Sear the steak

After everything is cooked, you can begin to assemble and fill your containers with the meals. Now you are ready for the week! Wasn’t that easy? How did it go?

Balsamic Chicken with Quinoa, Roasted Carrots and Feta

Serves 6 | Finish in 1 hour 15 minutes

This recipe was designed to be a part of a meal prep recipe trio: Balsamic Chicken with Quinoa, Roasted Carrots and Feta, Cajun Rubbed Steak with Sweet Potatoes, Peppers and Jalapeños, and Feta Dill Tuna Lettuce Wraps.

Ingredients

1 lb (about 18) rainbow carrots
2 Tbls extra virgin olive oil, divided
1 Tbls Litehouse Instantly Fresh Garlic
1 tsp salt
1 tsp pepper
3 cups cooked quinoa
4 boneless skinless chicken breasts
1/2 cup Litehouse Organic Balsamic Vinaigrette
1/4 cup Litehouse Feta Cheese Crumbles
Litehouse Instantly Fresh Parsley (optional)

Directions

 Place the chicken breasts and balsamic vinaigrette in a Ziplock bag and marinate at least 30 minutes.
 Heat oven to 425.
 Drizzle carrots with olive oil and sprinkle with garlic, salt and pepper.
Bake about 25 minutes.
 Heat a grill pan over medium heat. Add 1 Tbls olive oil. Cook chicken about 10 minutes. Flip to the other side and cook another 10 minutes.
 Divide the chicken breasts, quinoa and carrots between four containers. Top with 1 Tbls. Litehouse Feta Cheese Crumbles.


Cajun Rubbed Steak with Sweet Potatoes, Peppers and Jalapeños

Serves 6 | Finish in 1 hour

This recipe is designed to be made in tandum as a meal prep trio with Balsamic Chicken with Quinoa, Roasted Carrots and Feta, Cajun Steak with Sweet Potatoes, Peppers and Jalapeños, and Feta Dill Tuna Lettuce Wraps

Ingredients

1.5 lb skirt steak
2 tsp Litehouse Instantly Fresh Thyme
2 tsp Litehouse Instantly fresh Oregano
1 tsp Litehouse Instantly Fresh Garlic
1 1/2 tsp cayenne pepper
1 1/2 tsp paprika
1 tsp black pepper
3 large sweet potatoes, about 6 cups diced
4 bell peppers
2 jalapeños
3 Tbls extra virgin olive oil, divided

Directions

Heat oven to 425.
In a small bowl add the thyme, oregano, garlic, cayenne pepper, paprika and pepper.
Trim fat off of the skirt steak and pound to 1/4 inch thick.
Rub steak with half of the cajun seasoning and set aside.
Dice the sweet potatoes.
Line a baking sheet with aluminum foil. Add the sweet potatoes and drizzle with 2 Tbls olive oil and half of the cajun seasoning. Bake about 30 minutes.
Dice the peppers and jalapeños and add to the pan with the sweet potatoes. Continue to bake for another 15 minutes.
Heat a grill pan over medium heat. Add 1 Tbls olive oil. Sear the beef about 3-4 minutes on each side or until cooked to medium.
Divide the sweet potato mixture between four containers. Slice the beef in 1/2 inch thick slices and divide between the four containers with sweet potatoes.


Feta Dill Tuna Lettuce Wraps

Serves 6 | Finish in 15 minutes

Ingredients

(3) 5 oz containers of tuna in water, drained
1/2 cup Opa by Litehouse Feta Dill Greek Yogurt Dressing
1 large red pepper, diced
1/4 cup sliced almonds
2 heads of butter lettuce

Directions

In a medium bowl, add the drained tuna, feta dill dressing and diced red pepper. Mix well.
Rinse 16 butter lettuce leaves and pat dry.
Divide the tuna mixture between four containers.
Keep the lettuce and almonds separate from tuna mixture until ready to eat.
Spoon a few tablespoons of the tuna mixture on each lettuce leaf and top with sliced almonds.
