2 (6-ounce) skinless, boneless chicken breast halves, cubed
1 tablespoons rice vinegar
2 tablespoons dark sesame oil
1 tablespoons lower-sodium soy sauce
1/4 teaspoon crushed red pepper
1 garlic clove, minced or Litehouse Freeze-Dried Garlic
1 teaspoon sesame seeds
3 green onions, chopped
¼ cup + 3 tablespoons Litehouse Sesame Ginger dressing
Combine the chicken and ¼ cup Litehouse Sesame Ginger dressing in a bowl and toss to coat. Set aside to marinate for at least 30 minutes.
Bring a large saucepan of water to a boil. Add soba and cook 3 minutes. Add broccoli to pan and cook for an additional 3 minutes or until soba and broccoli are done. Drain.
Heat a large wok or sauté pan over medium-high heat. Add in 1 tablespoon of sesame oil. Add chicken to pan and cook for 5-6 minutes, until no longer pink in the center.
Combine the remaining Litehouse Sesame Ginger dressing, rice vinegar, 1 tablespoon sesame oil, soy sauce, crushed red pepper and garlic in measuring cup, stirring with a whisk. Add the noodle mixture to the pan with the chicken and drizzle with sauce mixture, tossing to combine. Sprinkle with 1 teaspoon sesame seeds and green onions and serve.
